Quiche

Finally had time to make the quiche. I got home after school and immediately started. I had never made bacon before. The smell usually makes me nauseous, though I love eating bacon. I think I did an okay job. Neither of us like artichokes or mushrooms, I forgot about them. Actually had to make two separate quiches. I simply split the recipe in half and put each in a regular pie tin. I put peppers in mine and ground beef in Travis’.

It tasted so good I had to sneak a few pieces.

When I heard the timer go off I raced downstairs excited. Half way down the steps I realized something, I forgot to put tin foil on top of the quiche. A little brown on top.  An hour may have been over doing it since I cut the recipe in half. Luckily it was only the top layer that was brown. I enjoyed the quiche, though I don’t think I will cut it in half next time. Travis, on the other hand, thought it was too eggy. Good for breakfast when there is company though.

Chicken Scampi

 By the time I got home, late again, Travis and I were both starving. Finally a dinner together. We were both glad for a quick meal. Travis started doing the dishes I had been putting off while I started cooking. Since Travis detests the texture of onions, I used onion powder. Since I am lazy I used garlic powder and lemon juice.

He swept the upstairs while I was at work too.
Travis does all the cutting for my safety.



















Since I don’t like seafood, and Travis wasn't in a complaining mood, I used chicken instead of shrimp. I always use Gordon Food Service frozen chicken. I know it sounds weird, but it is always juicy and tender. Plus I have had a hard time finding good fresh chicken. Travis did all the cutting seeing as I cannot be trusted with sharp objects.

Our thoughts? Not 6 servings. Travis and I each ate half, plus two pieces of garlic bread. We also thought there was way too much lemon. I would be willing to try again with more than 2 pieces of chicken and much less lemon juice. Travis not so much, but that is because he saw the calories. I will just have to try again and give him less pasta.






Chicken Tortilla & Twice Baked Potatoes

When I went to mom’s to make my meal, little did I know that I was also feeding three hungry teenage boys.  Jessie came over to help cook and we made an executive decision to leave out the beans. We really should have read instructions on the Chicken Tortilla Soup before deciding on a meeting time, and dinner time. With the boys hovering ready for dinner the soup did not simmer as long as it should have. We also put more cornmeal into the soup in an effort to thicken it a little more. I think next time I will cut some water since I cut the beans out. I might also throw in a third chicken. We also used hard tacos instead of corn tortillas and a yellow pepper instead of green.

There were seven of us at dinner. Steak was also on the menu. No potatoes made it home to Travis. He was very upset. I will definitely be making them at my next get together. Jessie and I loved the soup. The boys ate it and said they liked it. Don’t think they will be eating the leftovers though. Now just have to see what Travis thinks about the leftovers I brought home.

Travis was not a fan. His complaint, too many onions and peppers. I still thought it was yummy and will make it again for me in the future.

Blackhawks Room

New Year so new project for the house. We are finally painting a room. The enticer for Travis to finally agree to painting, a Blackhawks themed room. So 3 gallons of paint, 5 rolls of tape, and an assortment of rollers and brushes we were ready to start. Three walls for the three sweaters (jerseys) and the half wall to say Chicago Blackhawks. It took a day to get it all taped for round one. Half painted Saturday and the other half painted Sunday. My calculation for 2 coats of paint was wrong. Four coats of red and a run to Lowes for another quart the red later, the roller marks have finally disappeared. We of course had to stop for the Blackhawks vs. Redwings game. Then get to take the tape off.

The room looks amazing. I was nervous when the tape first came off, but when the Blackhawks Fathead Logo went up on the wall I knew it was going to be awesome. The sweaters hanging on the walls help and the black isn’t overpowering at all. All in all not a bad job for our first paint job. And Travis is more than pumped about his public man cave.
